Sunny Morning Muffins


So as many of you know I am obsessed with the Food Network. Anyway, I watched this recipe on TV and changed it up a little. It is so simple and the muffins are absolutely delicious!!!

Ingredients
1 cup strawberries, chopped
1 cup sugar, plus 2 tablespoons
1 1/2 cups all-purpose flour
Pinch ground cinnamon - I like cinnamon flavor so I used about 1/2 to 1 teaspoon
1/2 teaspoon baking soda
1/4 teaspoon ground nutmeg
1 teaspoon salt
1 ripe banana, mashed
** The recipe did not call for vanilla but I love to use vanilla in my baking. So I added about 1 teaspoon of vanilla extract
2 large eggs
1/4 cup canola oil
1 lemon, zested
1/2 pint blueberries
1 cup chopped walnuts - I do not like nuts in my muffins so I omitted the walnuts
Directions
Special equipment: muffin tin and muffin liners

Preheat oven to 350 degrees F.

In a small bowl, mix together strawberries and 2 tablespoons sugar. Let sit 15 minutes until strawberries give off juices.

In a small bowl, mix together flour, cinnamon, baking soda, nutmeg and salt.

In a large bowl, whisk together the mashed banana, eggs, oil, 1 cup sugar, strawberries, and lemon zest. (vanilla too)

Mix the dry ingredients into the wet ingredients until combined. Do not over mix. Fold in blueberries and walnuts.

Scoop batter evenly into muffin cups. Bake until a toothpick inserted in center of muffin comes out with a few crumbs but not wet, about 30 minutes. Cool on a rack to room temperature.

Molten Lava Cakes

Cam and I made this for dessert on Valentines Day and it was absolutely delicious. It is so fast and easy to make too! We stole the recipe from Food Network! We served it with raspberries and vanilla bean icecream.



Ingredients
6 (1-ounce) squares bittersweet chocolate
2 (1-ounce) squares semisweet chocolate
10 tablespoons (1 1/4 stick) butter
1/2 cup all-purpose flour
1 1/2 cups confectioners' sugar
3 large eggs
3 egg yolks
1 teaspoon vanilla extract
2 tablespoons orange liqueur - We used 1 teaspoon of orange extract instead and it was a perfect amount


Directions

Preheat oven to 425 degrees F.

Grease 6 (6-ounce) custard cups. Melt the chocolates and butter in the microwave, or in a double boiler. Add the flour and sugar to chocolate mixture. Stir in the eggs and yolks until smooth. Stir in the vanilla and orange liqueur. Divide the batter evenly among the custard cups. Place in the oven and bake for 14 minutes. The edges should be firm but the center will be runny. Run a knife around the edges to loosen and invert onto dessert plates.

Tuna Melts


Tuna Melts

Prep Time: 5 mins
cook time: less than 1o mins



Ingredients: 
       1 can of tuna fish ( i prefer packed in water but it doesn't matter)
1 english muffin sliced in half
shredded cheese
       1 -2 squirts of  lemon juice
        Mayo ( a little bit goes a long way but i guess it depends how much mayo u like)
  
 this feeds one.
               if you need more just add extra cans of tuna and english muffins. 1 can and 1 english muffin per person. 

 Cost is $1 for one can of tuna, $3 bucks for 12 english muffins. Roughly $2 or so for cheese. Cost might vary if you don't have mayo or lemon juice. 

 Directions: 

 Turn oven onto Broil 

slice english muffin and lightly toast
open can of tuna and drain water (0r vegi oil)
  
In a small bowl mix can of tuna with squirt of lemon juice first and then a little bit of mayo. 
spread a small amount of mayo on toasted english muffin
separate tuna mix onto the two english muffins and put in oven for about 3-5 mins
 keep watch so as to not burn english muffins or dry out the tuna
 after 3-5 mins add shredded cheese on top and let melt in oven for about another min or 2. 
Then pull out of oven and serve. 

 The perfect meal under 20 mins and it fills you up. Enjoy!

Crock Pot Stroganoff

Beef Stroganoff.


Prep Time: Less than 15 minutes, total.
Cook Time: 4 hours


Ingredients:

2-3 lbs of stew meat, 2 cans of Cream of Mushroom Soup, 1 cup of Sour Cream, Egg Noodles

Approximate cost is $8-$9.

Feeds 4


In your crock pot add:
2-3 lbs of Stew Meat
2 Cans of Mushroom Soup

Ready in 4hours: if you do the first 2 hours on high then 2 hours on low.
Ready in 6hours if you leave it on low.

About 10 minutes before you eat cook the egg noodles. Turn off your crock pot, then add sour cream just before you eat.

Serve sauce on top of noodles.

Wine of Choice with this meal is Mt. Dew.
